Contrary to other ordinary traditional liquors, like Takju, Dongdongju, Yakju that need more than a week of the ripening and fermenting period to drink, Gyemyeongju can be drunk in half a day, as the name means, "Brewing it at night to drink by when a rooster crows early in the morning."
Gyemyeongju was a fast-ripening liquor that used to be made when needing to brew one pressingly, and Ililju (one-day liquor), Samilju (three-day liquor), Gyemyeongju, belong to this kind of liquor.
Gyemyeongju also goes by the name of "Yeotakju." Takju is liquor you drink opaquely and thickly just by filtering the compound of hard-steamed salty rice and yeast through a sieve. On the contrary, Yeotakju does not use the steamed rice but the gruel of corn, sorghum and malt with yeast and pine needles in it. Gyemyeongju is liquor primarily brewed with hulled glutinous millet, and this ingredient makes the liquor ferment more quickly and clear. Since hulled millet was cultivated a lot in the northern provinces of Korea, the liquor was mainly produced there. Ms. Ok-Geun CHOI, who is now living in Jidun-Ri, Sudong-Myeon, Namyangju City as the Intangible Cultural Asset #1 of Gyeonggi-Do, is carrying on the family line of the Korean traditional high-quality liquor. She has been initiated in the mysteries of making it by her mother-in-law. It is widely enjoyed by many people because of its unique taste and fragrance.
Gyemyeongju is the 16%-alcohol-concentrated liquor made from Yeotakju, of 11%, with eight kinds of medicinal herbs in it, and has been designated by the present Ministry of Agriculture and Forestry as the Traditional Food #12.

The name "Gorosoei" originates in the name "Gollisu" meaning the "water for bones." The sap is extracted from the Gorosoei trees in high-elevated areas of 600 meters above sea level.
It is collected from the middle of February until the end of March and has such a unique taste and fragrance. It is also highly effective in relieving constipation, gastroenteric disorders, rheumatic troubles, arthritis, eczema and neuralgia.
The Gorosoei trees are distributed throughout 9 areas as Naebang-Ri, Jidun-Ri, Susan-Ri and Oeibang-Ri of Sudong-Myeon, Hopyeong-Dong, Palhyeon-Ri, Onam-Myeon.
To take advantage of the effects of the Gorosoei sap, large-quantity intake of it should be carried out with dried cuttlefish or peanuts in a warm floor-heated room.
